Buongiorno, era tanto tempo che non postavo un risottino e con l'arrivo del freddo è una di quelle preparazioni che più amiamo di questa stagione. Di solito li preparo io, ma stavolta Riccardo ha voluto stupirmi, con un abbinamento davvero sfizioso, lo speck con la ricotta salata!
Ingr.: (abbondante per 3 persone)
gr. 450 di riso
1 cipolla
gr. 200 di speck
gr. 50 di ricotta salata
olio extravergine di oliva
dado granulare vegetale bio senza glutammato
pepe nero
vino bianco secco
Preparazione:
Affettate sottilmente la cipolla e soffriggetela in un wok con dell'olio.
Unite lo speck tagliato a pezzetti e fatelo saltare finché non diventerà croccante; dopodiché toglietelo dalla padella e tenetelo da parte.
Versate il riso nel wok e fatelo tostare qualche istante, bagnate con abbondante vino e attendete che evapori.
Cuocete il riso unendo brodo (io acqua bollente + dado granulare) poco a poco e qualche minuto prima della cottura al dente unite la ricotta salata grattugiata, rimestate, spegnete e fate riposare 5 minuti.
Servite con ricotta salata grattugiata e pepe nero a piacere.
